The seminar will be held by Jerome Pivard, who will be presenting a paper on the topic of Choice Experiments and Behavioral Economics. Jerome is a second-year PhD candidate in Applied Economics at Paris-Saclay University, affiliated with INRAE and AgroParisTech in Palaiseau. Under the supervision of Vincent Martinet (INRAE), his research focuses on pivotal issues at the intersection of environmental economics and behavioral science.

Title: The choice of plant-based versus meat dishes in an experimental university restaurant: more about image than climate change?
Summary: The aim of this presentation is to gain feedback on an experimental design. The objective of the experiment is to examine whether making others' choices visible and activating social image considerations increases the individual likelihood of adopting pro-environmental behaviors, specifically choosing a vegetarian/plant-based meal, especially an organic one. The experiment will involve approximately 400-500 participants and will take place over 10 days in the AgroParisTech/INRAE/Crous experimental restaurant. Participants will choose between three dish options : a standard meat dish, a standard vegetarian dish, and a ‘premium’ organic vegetarian dish. Each dish type will be associated to a type of tray. We will use two types of nudges: the color of the trays will make choices more less visible (the organic ‘premium’ choice being the only one to be made visible to others by this treatment), while percentages of choices among previous groups will indicate a descriptive norm. We plan to explore how stated environmental concern (assessed ex-ante through a questionnaire) influences choices and individual sensitivity to nudges, and whether perceived social norms influence such choices. We will analyze the results based on the participants' stated environmental concern and general lifestyle, with post-experimental questionnaires used to understand motivations and verify the effectiveness of the manipulations.
